Gilberto Rojas

Huila is a southwestern department of Colombia. It is the country's biggest coffee producer, even though it is mostly composed of small farms. The secret behind their productivity is that the farms all have their small micro beneficio, or processing station.

This coffee is sourced from Gilberto Rojas and his farm La Florida in Acevedo, Huila. He has been in the coffee business for over 40 years and continues to refine his growing and processing methods. In 2015, he scored second place in the Cup of Excellence Competition and has only improved his agricultural approaches since.

The ethyl acetate decaffeination process uses fermented molasses from sugar cane as a solvent to release the caffeine from green coffee beans. This chemical-free process gives banana bread & dark chocolate notes to this coffee.
