Acquiares Red Honey

Cartago is a province of central Costa Rica and borders the provinces of Limón to the east and San Jose to the west. It enjoys humid tropical weather, intensified by the altitude and the presence of surrounding mountains.

This coffee is sourced from the Robelo Family and their Aquiares Estate farm in Turrialba, Cartago. The name Aquiares means “land between rivers” in the Huetar indigenous language. It is the largest farm in Costa Rica and home to 1 800 people. Although the farm was founded in 1890, Alfonso Robelo is the man responsible for its transformation a century later. Aquiares had more than 200 employee homes on the farm, but because none owned their home, there was great insecurity in the workforce. Alfonso saw this as an opportunity to strengthen the company by having people feel pride in the coffee they produce. He evolved the farm into a small town where workers purchased their own homes. Today, Aquiares remains a model of sustainable agriculture.

The resulting cup reminds us of blood orange, rooibos aand toasted marshmallows.

Mon premier sac Th3rdwave de novembre : Voici l'Acquiares Red Honey, un café torréfié par Discovery Coffee (Victoria, BC). Le grain Caturra est d'origine du Costa Rica de la région du Cartago. Il a subit un processus de nettoyage particulier qui se nomme "Miel Rouge" (d'où son nom). Je m'en fais un V60 avec 24g de grain pour 350ml d'eau. Au nez, le grain moulu possède des notes de tabac sec et d'orange. On perçoit aussi une odeur terreuse accompagnée d'une touche vanille. En bouche, les saveurs de thé rooibos telles qu'annoncées sont assez flagrantes. Des notes fruitées sont présentes alors qu'on goûte une impression terreuse douce de jardin. Une légère acidité rappelle l'agrume, voir légèrement le zeste d'orange. La finale laisse une emprunte vanillée sur la langue. L'Acquiares Red Honey est un café fin aux notes douces, mais éclectiques. Ces saveurs de thé sont joliment équilibrées avec le Caturra bien agrumé. C'est mon genre de café, où la torréfaction laisse place à l'exotisme du grain et de son processus. Très bien réalisé!
