Roaster's Choice

The Guji zone is a southern region of Ethiopia famous for its fruit-forward coffees. The ample rainfall and steep mountainous terrain create ideal growing conditions for the vast array of producers in the region.

This coffee is sourced from the Hadeso washing station in Shakisso, Guji. Located at 1,850m above sea level, Hadeso produces exceptional washed and natural processed coffees. Established in 2017, the station employs eight permanent staff and 250 seasonal workers, processing coffee delivered by 500 independent outgrowers from the nearby kebele of Dambi Uddo. Most contributing families farm organically on small plots, averaging 2 hectares, cultivating coffee alongside crops like corn and bananas under native trees. The high elevation and cool temperatures in the region contribute to the slow ripening of coffee cherries, resulting in denser beans and a sweeter, more complex cup profile.

The resulting cup reminds us of strawberry, shortbread and honey.
