Las Mishas

Cajamarca is a northern department of Peru that is part of the Andes Mountain Range and has a portion of its territory in the Amazon Rainforest. It also shares a border with Ecuador.

This coffee is sourced from 37 farmers in the Bomboca and Vista Alegre communities in the Colosay district, Cajamarca. Colosay is one of the few regions where traditional varieties are grown, rather than the more productive, but lower-quality hybrid varieties.

The resulting cup reminds us of fudge and neopolitan ice cream.

Good as both a straight up espresso and watered down as an Americano. Reminds me a bit of dark chocolate. Has a nice, subtle acidity at the end.
