La Divina

Santa Ana is a department of El Salvador in the northwest of the country. It is one of the most famous coffee-growing regions of the country, in the mountainous region around the Santa Ana volcano.

This coffee is sourced from Roberto Ulloa at his La Divina farm in in Apaneca-Ilamatepec, Santa Ana. Roberto is a 4th generation coffee producer and purchased the 245-acres farm land in 2007. At the time of purchase, half of the land was inhospitable, and had been neglected for 3 decades. Ulloa saw great potential in the land nonetheless, and was determined to repair it. By slowly introducing agroforestry and biodiversity of plants & animals over the years, he quickly turned it into a thriving coffee farm.

The resulting cup reminds us of banana cake and fruit jam.

Smells amazing in the bag. Roasted darker than I would have liked and I find it very sensitive. Made about 6 cups adjusting for temp and grind size and I find it easy to over extract, easy to get a bitter cup. I'll keep trying
