This exceptional Pacas coffee comes from the Metapán mountain range in El Salvador, where it is grown at an altitude of 1,700 meters above sea level at the El Izotal Estate. Produced using an anaerobic washed process, this lot reveals an intense and perfectly mastered aromatic expression. The Pacas variety, a natural mutation of Bourbon, is renowned for its balance, natural sweetness, and vibrant acidity. In this process, ripe cherries ferment in airtight, oxygen-free tanks, developing deep aromas and a unique fruity complexity. The coffee is then depulped, washed with pristine water, and carefully dried on African raised beds. In the cup, Anaerobic Washed offers a clean, elegant, and vibrant profile, highlighted by notes of green apple, tamarind, and lime. It combines the crispness of a washed process with the aromatic richness of anaerobic fermentation, resulting in a bright, balanced, and highly expressive cup. Scoring 87.5 points, this is a refined coffee crafted for lovers of fruity and innovative profiles.

Pour over
Very new to anaerobic washed, so take this with a grain of salt. Quite funky, tamarind shone more for me, but the apple slipped in as it cooled. On the stronger taste + light medium roast, try to go coarser or be careful with agitation or your filter! 4:6 method, with sweetness 2 first pours, followed by 2 even low agitations pours. 1:16.6 makes it very black tea like, delicious!
