Tokuma Decaf

This decaffeinated coffee comes from the Tokuma producer group, an initiative bringing together independent farmers from the Limu, Jimma region, who export their coffees directly, without intermediaries.

The group's model is based on a direct trade approach where producers retain full ownership of their coffees, from drying to export. Through Tokuma, we have the opportunity to work directly with several talented producers, including Mohammed Aba Nura, with whom we have collaborated for three years, and Abdo Aba Mecha, whose coffee we are featuring for the first time this year. The Tokuma group benefits from the support of Addis Exporter, which assists farmers in all stages, from agronomic training and quality control to export logistics. This unique model promotes complete traceability and ensures that revenue returns directly to the producers.

We are working with Osito Coffee for the import of this lot.

The Swiss Water process naturally removes caffeine using pure water, without chemicals. The green beans are first moistened, then soaked in hot water to extract the caffeine. This water is then filtered to remove the caffeine while preserving the aromatic compounds. The beans are subsequently immersed in this aromatic solution. As the solution already contains the same flavors as the bean, the taste compounds remain in balance and do not dissolve. The result is a decaffeinated coffee that retains all its richness and sweetness without compromising on quality or complexity.
