Paraiso 92
Un excellent café en provenance de la ferme Granja Paraiso 92 du producteur Wilton Benitez. Cette variété caturra a subit une fermentation anaérobique ce qui lui donne des notes particulièrement fruitées. En bouche, on a beaucoup d'agrûmes comme le pamplemousse et le pomelo mais la finale rappelle la rondeur du litchi. L'acidité est bien présente, ce qui en fait un café assez punché. Merveilleux en V60 et filtre.
An excellent coffee from the Granja Paraiso 92 farm of producer Wilton Benitez. This Caturra variety underwent anaerobic fermentation which gives it particularly fruity notes. On the palate, there is a lot of citrus like grapefruit and pomelo, but the finish recalls the roundness of lychee. The acidity is quite present, making it a coffee with a good punch. Wonderful in V60 and filter.
