This coffee comes from the Ijen Highlands in East Java, a volcanic region renowned for its fertile soils and dry tropical climate—an ideal terroir for coffee. In this area, producers cultivate coffee alongside fruits, vegetables, and tobacco. These producers, often operating small artisanal farms, focus on growing and harvesting perfectly ripe cherries. The freshly picked cherries are then evaluated and transported to the Bottolingo wet mill, where they undergo further sorting before drying. Only the most promising cherries proceed to natural drying on patios. In the cup, we discover an uncommon Java: vibrant acidity and fruit notes are prominent, balanced by spicy hints of cedar and a finish reminiscent of green tea.
