From producer Jhonatan Ruiz, Move is a washed pink bourbon from Colombia. Like many of the coffees we purchase from Colombia, producer Jhonatan Ruiz is part of the Monkaaba group in San Agustin, Huila. San Agustin is a small colonial town surrounded by lush mountains, home to hundreds of small coffee farms. We have approached this coffee as a filter profile, aimed to maximize juicy fruit notes with delicate floral aromas and sugar sweetness to balance it out. In the cup we're getting complex tasting notes that remind us of Sangria, with lots of berry's, slight orange juice, and even notes of red wine. The coffee has lively acidity which is balanced with notes of cane sugar.
