The region's high altitude provides optimal conditions for slow cherry maturation, and the coffee is washed with water from the Gondo River before undergoing a meticulous fermentation process. Sustainability is a shared priority for producers and the factory, with initiatives in place to minimize environmental impact, such as carefully managing wastewater disposal.

The resulting cup reminds us of blackcurrant, bergamot and shortbread.
