Coming from the Bourbon Sidra variety, it is distinguished by a 72-hour anaerobic fermentation using leachate from Java coffees. This coffee is known for its complexity and richness, with notes of apples, figs, and a floral finish. The Bayter family uses innovative fermentation processes to enhance the complexity of the coffee's flavors.
