Choluteca is the southernmost department of Honduras and sits on the border of Nicaragua. It is the first region to grow coffee in the country.
This coffee is sourced from the El Portillo farm in the Municipality of San Marcos de Colòn, Choluteca. Small producers in the municipality benefit from the help of COCASAM (Cooperativa Cafetalera Sanmarquena) in improving the overall quality of their crops. Though the pine forest area has an ideal microclimate for coffee growing, the forest's protected status prevents producers from expanding their farms. This has led them to focus on increasing crop yield and standardizing agronomic techniques to make their product stand out.
The resulting cup reminds us of toffee and nuts.
