Originating from Chaguite, La Paz, Honduras, this coffee is produced at the El Monarca farm by Isidro Rodriguez and his family. The variety IH-90, a hybrid between Timor and Caturra, was developed to resist leaf rust. The coffee is processed using a washed method with cherries floated, fermented, depulped, and then dried on raised beds and solar dryers.
