With comforting notes of vanilla wafer and milk chocolate, reminiscent of a cherished Canadian coffee-flavored candy bar, this blend offers a delightful treat for the taste buds. Its soft acidity perfectly complements its lush and creamy body, enhanced by a caramel sweetness that makes it a versatile indulgence suitable for any brewing method.

In the picturesque landscapes of Pitalito and Timana, Huila, a group of 96 exceptional independent women are at the heart of the Forest Academy and the Huila Condor Project. Passionate about coffee, these dedicated women nurture their beans and deliver them to a facility in Huila for quality assessment by a proficient team. Their mission is to revolutionize the realm of premium coffee!

Driven by a commitment to excellence, they engage in workshops to elevate their coffee production, focusing on refining processes, fermentation techniques, drying methods, and flavor profiles. Ensuring fair compensation is a top priority, with a generous payment of $350,000 COP per load, with half directly benefiting these remarkable women.

Fostering a spirit of friendly competition, they host the Forest Silver Cup to showcase their finest coffees and innovations. The women eagerly anticipate the involvement of coffee roasters who visit to witness their dedication firsthand. Beyond creating exceptional coffee, this project is centered on transformative impact within the coffee industry and the lives of these incredible women, their families, and the wider community.

Their special coffee begins with meticulous hand-picking of ripe, red cherries, followed by the traditional washed method and fermentation durations ranging from 24 to 36 hours. The beans are then sun-dried for 15 to 20 days, allowing the flavors to develop into a truly exceptional brew that embodies their dedication and passion for quality coffee production.

Pour over
Essayé en espresso et en pour over. Très adapté aux 2 types, mais j’ai une preference pour Pour-over. Café acidulé et fruité. Je ne vois pas la gauffre vanille ou le chocolat au lait, mais c’est un beau café d’été qui me fait rappelle que la vie est belle :) .
