***English version below Le Bajo tire son nom de Labuan Bajo, un village de pêcheurs indonésien situé sur l'île de Flores. Le projet, qui devait initialement s'étendre à Pantai Lima (Bali) et Labuan Bajo (Flores) sous la forme d'un restaurant, bar et boutique, avec à terme des hôtels et hébergements sous la même marque, a été brutalement interrompu par la pandémie de COVID-19. Un des associés, contraint de rester à Melbourne, a alors décidé de transformer 100 mètres carrés de son garage en café, en face de sa collection de Mercedes et Porsche. Le café propose un mélange original d'objets australiens vintage, de sandwichs japonais et autres gâteries, comme le Shokupan (pain au lait japonais) fait maison et fraîchement sorti du four. J'ai goûté leur spécialité : le sandwich au poulet katsu, composé d'une escalope de poulet panée, de chou vert finement émincé, de sauce tonkatsu, le tout soigneusement disposé entre deux tranches de pain blanc moelleux. Un délice, n'est-ce pas Millaa ? J'ai aussi acheté un pain Shokupan ; un peu cher (20 $ la miche), certes, mais parfait à partager en famille. J'ai adoré le décor original, le personnel est très gentil, un endroit où je retournerai avec plaisir. • Le Bajo is a name inspired by an Indonesian fishing town Labuan Bajo, on the island of Flores. What was suppose to be an expansion in Pantai Lima, Bali and Labuan Bajo, Flores as a restaurant, bar and store concept with future hotels and accommodation under the same brand, was on halt when COVID hit. So one of the partner forced to stay in Melbourne, when Covid hit, decided to turn 100 square metres of his garage into a cafe opposite a collection of his vintage Mercedes and Porsches. @lebajo_milkbar is a strange mix of vintage Australian goods, Japanese sandwiches and other good stuff, as in house-crafted freshly-baked Shokupan (Japanese milk bread). Tried their specialty, a chicken katsu sando, which is a fried chicken cutlet, finely sliced green cabbage, tonkatsu sauce, all neatly packed between two pillowy slices of white bread. Delicious, right Millaa? Bought a Shokupan bread, although a bit expensive ($20 a loaf), it was quite nice to share with the family. Loved the quirky decor, staff is very nice, a place to go back.
