El Paraiso Sake
A minimal fermentation washed process Geisha from El Paraiso that won first place in the innovation category at the 2023 Coffee Collection festival in Tokyo. The coffee cherries are first pulped to remove the mucilage and quickly cooled to minimize any fermentation activity. The mixture is then put in a rotating tank and undergoes a proprietary process to halt fermentation, increase contact between coffee and mucilage, and maximize the absorption of mucilage into the internal structure of the coffee seed.
