Tasting Notes of: Strawberry, Peach Rings, & Rose

Juan Martin is an innovative and experimental farmer that grows in the highest area of Sotara, just 30 mins from Cauca's capital of Popayan. Their farm focuses heavily on experimental processing of their highly sought after coffee lots. Juan Martin is at the forefront of this movement in Colombia, and their coffee speaks for itself in terms of flavor and quality. Throughout these processes, Juan Martin is dedicated to developing environmentally-conscious practices as well as providing jobs to community members with educational opportunities in their local area of Colombia.

This pink bourbon, natural processed coffee is achieved by picking the ripest cherries by hand, sorting them by quality, cleaning the desired cherries, and then placing them on raised beds in a covered area to dry for at least a two-week period. Colombia's high humidity and rainy climate do add to the challenge of achieving a high-quality naturally-processed coffee; but, when it is done properly and the coffee is moved consistently throughout the curing process, we are left with an exquisite end result. This coffee is an amazing example of a natural coffee done right. It is juicy and clean, with an approachable and exciting fruity taste.
