Espírito Santo is a southeastern state of Brazil. It is about the size of Estonia, or half the size of Portugal, and has a variety of habitats including coastal planes, lakes, mountainous forests, mangroves and many others.
This coffee is sourced from Anilar & Davi Simmer and their farm Sítio Ribeirão do Costa in Afonso Cláudio, Espírito Santo. The two maintain a partnership on the farm, which has been in their family for about 100 years. The property has about 26000 coffee trees planted, and there they grow Red Catuaí, Catuaí 44 and Catimor.
This Catimor microlot challenges preconceptions about the hybrid varietal. It is a blend of Timor (a disease resistant variety due to its Robusta lineage) and Caturra, a natural mutation of Red Bourbon originating from the Caparaó region of Brazil. At higher altitudes Catimor can be a lower quality coffee, but recently the coffee industry has taken notice that at lower altitudes—like those found at Sítio Ribeirão do Costa—this varietal can offer unique and delicious flavors.
