Jose Arguello
Chiapas is the southernmost state in Mexico with a coastline along the Pacific Ocean to the South. The state borders the Guatemalan coffee-growing region of Huehuetenango.
This coffee comes from Jose Arguello and his Santa Cruz farm in Concordia, Chiapas. Jose's coffee has twice won Mexico's "cup of excellence", one of which broke the record of points achieved in his country. The Santa Cruz farm is perched in a unique ecosystem that offers an ideal terroir for coffee growing.
This coffee was picked during the full moon. The coffee beans were then fermented for 36 hours in the open air, dried for two days in the sun and 19 days on raised tables in the shade.
The resulting cup reminds us of apricot, grilled almond & vanilla.
